These vegan pancakes are slightly sweet from mashed banana, and high in fiber thanks to coconut and oats. If you are gluten free, use certified gluten free oats, and you’re there!
½ cup almond milk
½ banana, mashed
1 tablespoons ground flax seed
½ cup oat flour
½ cup shredded coconut
1 teaspoon baking powder
1 teaspoon cinnamon
Juice of 1 orange
1 tablespoon coconut oil
Combine the almond milk, banana, and flax seed in a bowl. Stir and let sit for 5 minutes.
Combine the oat flour, coconut, baking powder, and cinnamon and add to the banana mixture. Stir in the orange juice.
Heat a skillet or griddle over medium heat and add the coconut oil. Drop batter by spoonfuls onto skillet and cook until browned on both sides.
Serve warm with fresh fruit and maple syrup if desired.
