Mama’s Pepper Steak Recipe

Just like mom makes it. Deliciously seasoned Pepper Steak with bell peppers, onions a complete meal served with freshly cooked rice… Please enjoy!!

2 lbs of Sliced Sirloin

2 tbsp Olive Oil

1 Medium yellow onion sliced thin

1 Green bell pepper sliced thick and chunked (remove seeds)

9 Small sweet peppers, tops off, sliced in 4 (remove seeds)

**Note: If you don’t want to use the small sweet peppers, you can use an additional green bell pepper or another two smaller red/yellow/orange bell peppers. They’re sweet also**

1 tablespoon chopped garlic

2- 14 oz cans diced tomatoes (plain or sweet onion, not Italian though, It’ll mess up the flavor profile.)

1/4 cup low sodium soy sauce

1/4 cup low sodium Worcestershire sauce

1/2 cup ketchup (or spicy ketchup… I use spicy ketchup because I love spicy)

2 cups beef broth

1/2 cup cold water

3 tbsp. cornstarch (2 if you don’t like it too gravy-like)

1/2 teaspoon of black pepper (or however much pepper you like)

Cayenne to taste and Salt to taste

Allow the mixture to come to a slight boil, making sure you mix everything together. When it comes to a boil, put a top on the pot and reduce the heat a little higher than low and let it simmer for 45 minutes to an hour. If you think the gravy is too thin, mix the cornstarch and water together until it’s dissolved and add this slurry to the pot. Allow to simmer an additional 10 minutes if you do this.

Add olive oil to pan/pot over a medium heat and add sliced sirloin. Brown the sirloin until it’s done. Drain sirloin in colander and place to the side. In that same pot, add all of the ingredients, liquids first (EXCEPT FOR THE WATER AND CORNSTARCH), then veggies, then steak.

If you feel it needs salt, add it. remember, you can always add salt, but you cannot take it away. Over-salting will ruin your food. Serve over white rice or brown or however you’d like to eat it.
